Chicory Green (Cichorium intybus)

This is the culinary chicory. It makes a very striking plant with big leaves that form a strong clump. Slender stems carry lovely, azure blue, rounded flowers, which close at lunchtime. When open, the blooms have a particularly clean pure colour, so it is worth going into the garden early when it is in season. It is possible to eat the roots: you have to lift them in autumn, and put them in sand or peat and keep them in the dark until they turn into elegant endives.
